Wide Blade Knife
Professional knife for the dissection of meat with a further widened blade than the slicing model. The lower lenght blades version, cm 16-18-20-22, are particularly suitables to remove fat during the processing pork bacon; the longer sizes, cm 28 and cm 31, are mostly used in cutting meat by hand on butcher desk and preparation of tartare meat by knife.
